Zucchini Bake

Zucchini Bake by: Barbara Hodges

1 1/4 lbs young zucchini
4 eggs
1/2 cup Milk
3 Tbsp Flour
1/2 tsp Baking Powder
1/2 cup Cheese -- grated
1/4 cup Parsley
1/4 cup Green Pepper -- diced

Directions: Wash and trim zucchini, cut into 1/2" thick slices. Cook 5 minutes. Mix rest of ingredients. Stir in zucchini and pour into a 2 quart baking dish. Bake at 350 degrees for 40 minutes.
