Luscious Lemon Bars

You need just 5 ingredients to make the perfect lemon bars. It's the perfect balance between sour and sweet.

Prep Time: 15 minutes

Cook Time: 50 minutes

Total Time:1 hour AND 5 minutes

Servings: 9 lemon bars

Ingredients

Shortbread Crust

·         1/2 cup sugar

·         1 cup salted butter, sliced

·         2 cups flour

Lemon Layer

·         1 1/2 cups sugar

·         1/4 cup flour

·         4 large eggs

·         1 cup lemon juice

Instructions

1.            Preheat oven to 350 degrees. Line a 9x9 baking pan with parchment paper.

2.            In a medium-sized mixing bowl, use a pastry cutter to combine the butter, 1/2 cup sugar, and 2 cups flour, or use a food processor. Press this dough into the bottom of the 9x9 pan. Bake for 15 minutes. 

3.            Five minutes before the crust is done baking, mix the 1 1/2 cups of sugar and 1/4 cup of flour. Whisk in the eggs and lemon juice.

4.            Gently pour the lemon mixture over the baked crust and return to the oven and bake until the lemon layer is set, about 40-50 minutes. 

5.            Let cool completely before dusting the tops with additional powdered sugar, if desired.  

Texas Sheet Cake

TEXAS SHEET CAKE

Ingredients: Cake:
 
2 Cups Flour 
2 Cups Sugar 
1 teaspoon Salt 
1 Cup Butter Softened 
1/4 Cup Cocoa 
2 Eggs 
1/2 Cup Buttermilk 
1 Cup Hot Water 
1 teaspoon Baking Soda 
1 teaspoon Vanilla 
1 Tablespoon Vinegar 

Frosting: Ingredients 
1/2 Cup Butter, softened 
6 Tablespoons Milk 
1/4 Cup Cocoa 
3 3/4 Cups Powered Sugar 
1 teaspoon Vanilla 
 
Instructions: 
1. Mix together flour, sugar, and salt in a bowl and set aside 
2. In a saucepan, add water, cocoa & butter. Stir until butter melts and the mixture comes to a boil. Pour over dry ingredients and stir 
3. Add in Eggs, Buttermilk, baking soda, vanilla, and vinegar. Mix to combine 
4. Pour into a greased 15x10x1 pan (sheet pan) 5. Bake at 350 degrees for 25 minutes 

Frosting Instructions:
1. Mix Butter, Milk, and Cocoa together
 2. Add Powdered Sugar & Vanilla 3. Beat Well and spread on a hot cake as it comes out of the oven. 

Notes: 1. Use a plastic disposable knife to cut the cake into pieces. Using the plastic knife helps you get a nice, clean cut, and the frosting doesn't build up on the knife. 
2. Add Chopped Nuts to the top if desired
3. Both my Mom and my husband's Mom would make this cake for family get-togethers.
